Starting out making one of Peru's finest piscos, José "Pepe" Moquillaza started to work with criolla grapes to make natural wines. Pepe seeks out old vines of criolla grapes - quebranta, italia, albilla and negra criolla - around the traditional Pisco grape-growing area in the south of Peru, and makes wine out of is 'wine lab' in Quilloay, Ica. Pepe is on a mission to define Peru's different terroirs and soil types by making wines across the desert and coastal regions of Peru in discrete categories and revive its wine heritage,
