2021 Domaine du Closel SAVENNIERES Les Caillardières

The Caillardières are harvested later, the berries are very golden, which gives wines with aromas of cooked apple, exotic fruits, raisins and toasted almonds. The terroir gives it a very silky texture characteristic of these schisto-sandstone plots. This vintage is vinified and aged in barrels which allow a slight bitterness to be revealed at the end of the mouth thanks to micro-oxygenation, which will give more length to the wine. This wine, rather smooth on the palate, has character. It goes very well with artichokes or asparagus, vegetables that are difficult to pair with wine. It is also very popular with sweet and savory dishes such as veal stew with orange, monkfish with honey and cider vinegar, or roast pork with pineapple.
